The two-half day course, delivered via our engaging learning platform, has been designed to help all those in catering businesses who need to manage food and beverage costs, from purchasing through to selling products. Learners will have the opportunity to receive expert instruction and coaching from Debra Adams, founder of arena4finance, a UK based training consultancy specialising in accounting for the hospitality industry and the timing could not be more critical for the sector.

In August last year, hospitality businesses were relieved to welcome consumers back following the easing of lockdown restrictions, many signed up to the Eat Out to Help Out Scheme which boosted footfall and a reduced rate of VAT was introduced to help ease the pressure on businesses. Fast forward to October 2021 though and although social distancing restrictions have eased for several months now, which has been a welcome relief for many businesses, VAT has risen to 12.5% and businesses are faced with rising food costs due to a complex combination of supply issues, staff shortages, increased inflation and higher transport costs.

As hospitality businesses work out how to bounce back, it is critical that they monitor and manage their costs. Without close monitoring, the rising cost of food and beverages and wage inflation could drain vital cashflow, so hospitality businesses need to ensure that every stage of the purchasing cycle and costing process is designed to be sustainable and maintain profitability.

‘Cost Control for Food & Beverage Operations’ has been designed as a short intensive online course to help participants understand pricing methods and the control of gross profit as well as assisting with the effective execution of daily tasks such as ordering, storage and issuing stock. Since payroll costs tend to be a significant cost for many, the course will also cover wage and salary controls.

Divided into six key topic areas, the course will cover:

- Best practice in purchasing and stock control
- Menu planning, standard costing & gross profit management
- Impact of sales mix and menu engineering
- Wage & salary scheduling control
- KPI’s for food & Beverage control
- Action plans for profit improvement
